I'd have plenty of good "carpets" if my screenshots actually went to the screenshot folder from my Greek campaign. I've had lots of battles where three lesser armies surround me, so I put my hoplitesinto a position like this:

Archers in center, cavalry usually hidden in forests to chase archers and routers. Often a unit or two of more hoplites in the middle to bolster wherever I need more men. I know this won't work against human players (archers, have a field day!) but against the AI it is freaking invincible.
Most of the time the enemy would attack, suffer casualites, route, reform, route, reform, route, reform, and then finally just run away. I'd virtually have one small box of casualties at the end, save the few scattered dead men I killed when the battle was won and everyone fleeing.
