Whats annoying, big and kills things:
The answer is: the chariot (also elephants)
Cavalry are annoying too
To kill chariots, I suggest using archers and spearmen (don't try using spearmen against chariot archers)
Elephants are extremely effective against cavalry. Use inceidenary pigs or inceidenary onager firepower.
To kill horse archers/skirmishers, use your own horse/chariot archers or skirmishers and charge at the enemy. If the enemy runs, they will still be hit with arrows/javelins. Alternately, use foot archers, because horse archers have no sheild (therefore, no defense against arrows).

You can kill them with cavalry, though it's a real heart in your mouth moment. I've had to do this to British chariots on a German campaign, when I start with no archers and haven't really any other way of killing them. If the chariots stand very still then the cavalry will kill them, though it gets annoying if the chariots have the cheek to start moving around. The poor legs of my horses!

Single best way to kill elephants is javelin cavalry, such as milita or Numidian cavalry - they slaughter elephants. Skirmishers are also extremely good vs elephants, as long as you have 2+ units.
Slingers will so well vs elephants and armoured cavalry.
Long range archers (i.e. Chosen Archers/Foresters/Cretans) are the best solution to horse archers IMO. The do more damage, and generally have better range than horse archers.
Chariots are slaughtered by phalanx troops, or tightly massed infantry, a stopped chariot is a dead chariot. Chariot archers are really vulnerable to long range archer units also, they are easy to hit and have no armour.

Am I the only one who has had no luck with skirmishers against elephants? They're useful against chariots, but they always seem to be caught and routed by elephants, even if I have 3 on 1 elephant unit.
Javelin cavalry are good against most things, except other missile cavalry.
Phalanges are actually effective agsinst elephants, but not is the same way as with chariots.
Chariots are fragile, so if you just catch the tail end of them they will be scuppered. Otherwise, you can just let them charge onto your pikes.
Try this with elephants and it is you who are scuppered. You have to order your phalanx to attack the elephants. It is best with three: one on each flank and one at the front. The beasts usually die quite quickly and the rest rout when being prodded from all sides with pikes.

I hate chariots. Cavalry are ineffective against them and they can run away.
