In my opinion custom battles are a poor way to prepare for battles in the campaign. What I would do is start off with a Roman faction, as they have the best units and a relatively safe starting point and just practice. The first part of the game will be against relatively small armies then obviously over time the AI will have a chance to build up. Also, focus on defending first by letting the enemy come to you then when you're familiar with the AI tactics do some attacking yourself. It's relatively easy to expand yet only play battles where you defend- just plant an army in the middle of enemy territory or at achoke point like a river crossing and wait for them to attack or in a siege just wait for the enemy to sally out.
The Brutii are probably the easiest faction to start off with as the AI is really rubbish at phalaxes. Just pin them with one unit then send another unit to flank them. Macedon will occasionally send cavalry heavy armies which can be a pain thanks to Rome's lack of spears early on but even though you will take some casualties, in a prolonged fight it will be you who comes out on top. Hoplite mercenaries are a great way to limit casualties, but are only available in a limited number and you can't retrain them. Due to their slow movemnet speed, fighting against hoplites will give you plenty of time to think about what to do so you can get used to fighting battles. Obviously the pause button is an option too.
