Egypt is usually the biggest threat, but you can concentrate on Egypt a bit first, then see if you have enough power to take out Pontus. Armenia and Greece are usually quite neutral for a long time. Parthia can get annoying but they don't get too powerful very quickly.

When playing as the Seleucids I bee-line for Egypt and just hold the northern border until they're wiped out. Pontus/The Greek Cities are next to fall, followed by Armenia and Parthia. Then I take a break for a while, build stuff, train armies full of elite troops, and crush the Romans.

i would have to say that greece poses the biggest threat over time, if they start to mass produce armoured hoplites and spartans, no battle becomes "easy". though if you take egypt and get the economic boost from them, you should be able to take greece before they become too advanced. just my 2 cents.

Except a human player. AI Vs AI or human Vs AI they might win, but against another human it wouldn't be so easy.

Since catas and ele can be recruited only from tier 4 and 5 you'll have to fight for quite some time with levy pikes and phalanx pikes assisted by some archers and light cav.
In my campaigns I turned most my attention to egypt, if left alone they can become very powerful and hard to beat.
Uniting Anatolia seems a good idea too, haven't really tried that approach. Would be nice if you could archieve that before facing Egypt.
And elephants are about the best urban killers in the game. They need a lot of babysitting though to do their job properly most of the time.

They are best used to improve morale, and should not really join the fight unless they have to.
